When plucking, the bird needs to be warm, this will produce a better finish.
If you try to pluck a cold bird you will risk tearing the skin, this applies to both mechanical and hand plucking.
After dipping / scalding the bird in hot water place the birds against the drum which has rotating rubber fingers which will remove the feathers but not tear the birds skin.
